The grain of ox beef, when good, is loose, the meat red, and the fat inclining to yellow.

수소 쇠고기는 좋은 것일 때 결이 느슨하고, 살은 붉으며, 지방은 노르스름한 편이다.

Cow beef, on the contrary, has a closer grain and whiter fat, but the meat is scarcely as red as that of ox beef.

암소 쇠고기는 반대로 결이 더 촘촘하고 지방이 더 희지만, 살은 수소 쇠고기만큼 붉지 않다.

Inferior beef, which is meat obtained from ill-fed animals, or from those which had become too old for food, may be known by a hard, skinny fat, a dark red lean, and, in old animals, a line of horny texture running through the meat of the ribs.

질이 낮은 쇠고기는 제대로 먹이지 않은 동물이나 식용으로 쓰기에 너무 늙은 동물에서 얻은 고기로, 딱딱하고 거친 지방, 짙은 붉은 살코기, 그리고 늙은 동물의 경우 갈비 고기 사이로 뿔 같은 질감의 선이 지나는 것으로 알아볼 수 있다.

When meat rises up quickly, after being pressed by the finger, it may be considered as being the flesh of an animal which was in its prime; but when the dent made by pressure returns slowly, or remains visible, the animal had probably passed its prime, and the meat consequently must be of inferior quality.

손가락으로 눌렀을 때 고기가 빠르게 되돌아오면 한창 때의 동물의 살이라고 볼 수 있지만, 눌린 자국이 천천히 돌아오거나 그대로 남아 있으면 그 동물은 전성기를 지났을 가능성이 높으며, 따라서 그 고기는 질이 낮을 수밖에 없다.

On examining the loin, if the fat enveloping the kidney be white and firm-looking, the meat will probably be prime and recently killed.
